I'm glad I live at the end, it gives me more of a yard lol . I have 2 humming bird feeders and one block for the birds. My tomato is not as big as last years but I still am getting great tomatoes off it and get lots from the farm any way so I have enough.

No Rain today !!!
Well I hope to get to the pool today. I got a thing to go on a noodle for $2.00 yesterday too and I wan to try it out. lol it even has a cup holder.
My flowers are getting so pretty, I love to set out here and watch my birds, and relax.

Going to be a busy day
Very busy day today and I hope the rain stops. we have not had as much as they have at home and I sure hope the basement does not flood again. There are lots of reports all over about floods this morning.I got lots of my running around done now let's see if I can get some baking done.
About $15.00 with tax !!! they were all $ 1.00 each. They will come in handy for in the hot tub or the boat or going in the pool with all the chlorine and I can save my good one . Ok off to do my baking.
When I went out today I found a sale ;) I got my bathing sutes for the next few years lol . guess how much I spent for them all ???

Chocolate Zucchini Brownies
I was going to make Chocolate Zucchini Bread but I found this recipe and I made it today and I think I will make the bread in a few days.
They were so so good and I added my Black Walnuts !! Yum
After making these again if you want fuggy not cake brownies add a egg to it. ;)
Chocolate Zucchini Brownies
Ingredients
- 1/2 cup canola oil
- 1 1/2 cups sugar (you can replace up to half of the sugar with a stevia blend)
- 2 teaspoons vanilla extract
- 2 cup unbleached all-purpose flour
- 1/2 cup unsweetened cocoa
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 large zucchini to yield 2 cups of shreds
Instructions
- Preheat oven to 350 degrees F.
- Combine oil, sugar and vanilla extract in a bowl until well-combined and crumbly.
- Combine flour, cocoa, baking soda and salt in a separate bowl.
- Add sugar mixture to the flour mixture.
- Using a grater, shred the zucchini.
- Stir the zucchini shreds into the batter until thoroughly incorporated. Batter should be moist and thick.
- Scrape batter into an 8 x 11 baking dish.
- Bake for approximately 25-30 minutes or until the brownie is fairly firm and begins to pull from the sides of the pan.
They were so so good and I added my Black Walnuts !! Yum

Sunday we slept in and then went to Lexington. We stopped to see Cameron and then went to Sam's Club. It sure is easy to spend lots there lol. Sam took me to my favorite place to eat. I went to take his photo and said "smile" and this is what I got !!!!
Sam broke the beans for me. we watched the race and then he put up the shelve in my closet for me. So all in all it was a great Sunday !!!

Went to the Farm
We took a trip to the farm and Look what I got. Some of the tomatoes are purple ones
We went to check out the house and get the tag off the truck and we stopped at Kelly's. A neighbor came by with a bushel of sweet potatoes and we brought some home and Randy gave us some green beans and tomatoes too. Kelly is learning to can now and she gave me a jar of her garlic Dill pickles and they look so good ! When we got to the house I went to the garden and got some squash and green tomatoes and corn and a few other things too. We got home and I heated up the pork roast and cooked some veggie's and called it diner and it sure was good .

It's the Weekend

It is going to be a busy day. Sam is home and I'm going to try to sew some on my Jeans and seashell quilt. We are going to Salyersville to get the plate off the old doge truck Cameron wrecked to put on the new truck I sure hope it is still there or I get to order a new one.

Sandy messaged me today with her # and address for the boys and said The boys are great! Chris just started at Trafalgar 2 days ago in 6th grade and Matthew is in 4th grade at Pine Island Elementary.I cant believe how fast they all are growing up. Alyssa started High school, Kylie preschool, Colten started Collage in Morehead !!

Cold quinoa salad and Roasted Cauliflower and Cherry Tomatoes
Last night I made a Cold quinoa salad and it was great !! Sam even loved it and tonight I'm going to make this one. I have lots of cherry tomatoes. I got the recipe

but It is just onions, tomatoes,Bell peppers, some jalapenos, garlic, and then salt and paper with a little olive oil ( I used grape seed oil).
- 1 head cauliflower
- 5 teaspoons extra-virgin olive oil
- 1 teaspoon chopped garlic
- Salt, to taste
- White pepper, to taste
- 1/2 pint cherry tomatoes
- 1 teaspoon Dijon mustard
- 1 teaspoon red wine vinegar
- 1 tablespoon chopped parsley
1. Clean the cauliflower and cut into small florets.
2. Toss the cauliflower with 2 teaspoons olive oil, garlic, salt and pepper, and roast at 375° F for 15 to 20 minutes.
3. Toss the tomatoes in 1 teaspoon olive oil and add to the cauliflower. Roast an additional 8 minutes.
4. Whisk together the Dijon mustard and the vinegar, then slowly incorporate the remaining 2 teaspoons olive oil to make the vinaigrette.
5. In a bowl, gently toss together the cauliflower-tomatoes mixture, the parsley and the vinaigrette.
