Mother's Day and Creamsicle Ice Cream


Saterday I met Josh and his boys and Billy, Jen and Kylie at micheli's in Matlacha for a Mothers Day Lunch.
It was nice, I was nerves but it went well. The boys are getting so big !! Matt looks just like Josh did at his age too. Lunch was awesome too I had Bang Bang shrimp salad.
Sunday was mothers day and Debbie cooked lasagna I made a salad and mom made garlic bread. Franks mom and dad came over too. Frank and his dad worked on there boat and got it running and took dad for a ride.

4-Ingredient Homemade Orange Creamsicle Ice Cream

What You Need:

-1 3/4 cup coconut milk, full fat
-2 medium oranges
-4 tbsp sweetener (honey, maple syrup, powdered sugar – whatever you’d like!)
-1 tsp vanilla extract

What You Do:

  1. Peel oranges and break them up into sections. Lay them flat on a baking sheet and place in the freezer until they harden.
  2. Blend coconut milk and half of frozen oranges in a blender until smooth. Add in remaining oranges and continue blending.
  3. Add in the sweetener of your choice and the vanilla extract. Blend once more until well-combined.
  4. Pour mixture into a freezer-safe container and freeze until completely solid.

  5. When ice cream is hardened, let it sit out for a few minutes before you serve (so that it’s easier to scoop).
