Shoveling snow

I got one of the parking places cleared so it will not be solid ice all week when I try to park,

I hope I will be able to get up the hill to park now that I have moved some of the snow off so the sun can milt the rest. I'm sure the neighbors think I'm crazy but are glad I did it too.  no one is using the other drive at all !

VANILLA CUPCAKES..THE BEST!!!

1 ¾ cups plus 2 tablespoons flour
¾ teaspoon baking powder
¼ teaspoon salt
¾ cup butter, at room temperature
1 ½ cups sugar
3 eggs
¾ cup whole milk
1 ½ teaspoons vanilla extract

BEAT BUTTER AND SUGAR. ADD EGGS ONE AT A TIME. ADD VANILLA. COMBINE DRY INGREDIENTS AND ADD, ALTERNATING WITH THE MILK. DIVIDE IN MUFFIN TINS AND BAKE AT 350 20-23 MINS UNTIL TESTER COMES OUT CLEAN. COOL COMPLETELY BEFORE FROSTING.
FROSTING!!!!!
ELECTRIC MIX ALL UNTIL FLUFFY...
3 STICKS SOFT BUTTER
3 3/4C POWDERED SUGAR
9T. COCOA POWDER
6T. MILK
SPLASH OF VANILLA
6 TSP. JACK DANIELS

It's a Blizard out there

I'm so glad I'm off today !! I got up with Sam and got him off to work but I don't think he will work to long it is bad out there today!  20  and 30 MPH wind with snow. we are going to get 3 to 6 inches today they say.

I'm going to stay inside and watch TV and do some cooking.. I don't have to go back to work tell Tuesday so I'm going to just chill :) BTW Sam got his hair cut the other day and  said he was tired of his old mad hair cut and went back to the way I had him do it a few years ago !!! I had nothing to do with it this time I was shocked when I came home but I like it.

TGIF

It's Friday !!  I got off at lunch today and I and stopped at Costco and got my photo on my new card and filled up my gas tank at 3.06 a gallon :) I got some other things too. I got a roll of stamps before they go up on Monday! The weather is cold but dry today and we are getting more snow tonight. Here are some of the photos  I might not have showed you all yet :)

Well it has been a busy week to say the least. I have been working  lots. I got 50 hours in and only had Sunday off !  I worked Monday and then Tuesday I woke up to 3 inches of snow and left for work before the storm hit Lexington. I got off at 2:45 and got home at about 4 and the roads were bad.  But I did it !


Sam and I both stayed home today. It is only - 4 right now and  the roads are to bad for me to try it :(.
 I will post some I take at the apartment  in a bit.

Rainy Monday

 Sunday I  went to work but they only let me work 4+ hours and sent us all home. when I got home Sam Sam said he would  take us to diner so I drove back to Lexington and went to the Chinese buffet and it sure was good !!!  then we went to Traider Joe's and  to the Mall  to go to the last day of Sears in the Mall :( I got 2 shirts and a belt all 90% off !!  it was crazy the ladies and I say it loosely were fighting for the stuff !! lol  ... After that we went to Best bye and  I got Sam and Logitech Harmony remote <<<< click this to see it !!
you might find it cheaper some where but we paid 59.00 for it it is the 5 device one. We stayed up tell 11 messing with it and playing :) but got rid of 5 of the remotes on the table so I'm happy !!!!!


Today I was off work !!!
 I got up with Sam and fixed him breakfast (that he forgot to take with him) and packed his lunch. I wanted to go back to bed but it was clear and this afternoon it was going to rain so I stayed up and  went to the Chiropractor.  There was a beautiful sunrise !!! I did get some photos of it but cant get them to my PC yet my card reader is messed up. Then went grocery shopping and I stopped at the car wash and vacuumed my car out and went to the heath food store and got us some nuts and seeds LOL; and  the last stop was to the tobacco store.
   I got home and made my  Granola and yes I have photos of that too but cant post them :(  and I made some Chicken gumbo !!!! It was good but it is not as good as Dads :) I did some laundry and now going to watch Blacklist !!!!

Woot Woot I got 50 Hours in this week

Yes I'm tired and sore but I can do this !!!!!

I have one more day to go and I think we will only work tell lunch so I can do it !! They made the ones that worked today there mandatory over time day go home at lunch so I think we will get off early.
There is going to be a lay off soon I kind of hope to stay on long enough tell the work picks up and I can get on at the Labor Union. I think I will go to the hall this Tuesday  on my day off and just talk to them and see if any work is coming up. LOL  the Hall is right by Traider Joe's too  so that's a good thing too.  Time for diner and a shower !!!!

Tired today

Today went fast at work but I'm very tired. It snowed on the way home again today. I think I will get 50 hours this week if all goes well. Sam is already wanting me to call in on Sunday  and stay home with him. LOL  well diner was cooked when I got home and it was good too :).  Chic filet chicken and mashed potatoes and corn lol He looked up the recipe  on the internet. well bed time here .

Frozen Tuesday

 I was off today and Sam stayed home to.  It is still so cold. Our water was frozen and we never got it on tell about 3 this afternoon. We went to The working mans store and I got me a new hoodie and then to Tractor Supply and I go one there too :)  one is pink and one is black.







No wonder we have no water lol !!!!!

Ingredients:

Instructions:

  • Heat 2 tbsp of the olive oil in a deep skillet or pot over medium heat and saute the onion for about 3 - 4 minutes, until softened, then add the garlic and cook for another minute or two.
  • Increase the heat to high and add the ground beef and season well with salt and pepper.  Cook until browned, crumbling it up as it cooks.
  • Stir in the thyme, paprika, worcestershire sauce, brown sugar and vinegar and cook for a couple more minutes before adding the tomatoes and tomato sauce.  Swirl about 1/4 cup of water in the bottom of the tomato sauce jar and add that as well.
  • Let this simmer for about 15 minutes, then stir in the cooked rice and remove from heat.
  • In another large, deep, pan heat 2 more tbsp of olive oil over medium high heat and add the chopped cabbage.  Cook, stirring almost constantly until the cabbage is about half cooked - add salt and pepper generously as it cooks, then remove from heat.
  • Heat your oven to 350 F (175 C) and grease a large casserole dish.
  • Spread about 1/2 the cabbage onto the bottom, pressing it down a bit with the back of a spoon.
  • Spoon half the beef mixture over the cabbage, then add the other half of the cabbage and finish with the rest of the meat mixture.
  • Cover tightly with foil and bake for about 45 minutes, then remove the foil and sprinkle the cheeses on top.
  • Bake uncovered for about 10 more minutes, until the cheese melts, then move the dish to the top of the oven - turn the broiler on for a minute or two until the cheese begins to brown.

well baby it is cold !!!!!
 -2  with -20 wind chill is crazy !!!!   I threw some water out  to get a video of it freezing before it hit the ground. I will up load it in the morning. I took the tree down today and hope to just rest tomorrow.I made some snowcream too.

  • 4-6 cups fluffy, freshly fallen snow
  • 1 cup milk or cream
  • 1/2 cup sugar, to taste
  • 1 tsp. vanilla extract
  •  Fresh fruit or toppings 

  1. Collect clean, freshly fallen snow by scooping it up from an undisturbed spot, or sitting a large bowl outside to collect it as it falls from the sky. Do not pack the snow. (To keep the snow from melting, either sit it in the freezer until step #3, or make this recipe outside.)
  2. In a large bowl, mix together the sugar, milk, and vanilla. Stir until well mixed and sugar is dissolved.
  3. Pour the milk mixture over the snow and mix until blended. Serve immediately.
Ingredients:
4-6 cups of fresh, clean snow
1 cup of milk
1/2 cup sugar
1/2 teaspoon vanilla
toppings as desired

Happy New Years Day


As another year draws to a close, many of us find ourselves looking back across 2013 and weighing the good and bad as if to decide which side the scales are tipped toward. There were days filled with laughter and days fraught with tears. There were times of celebration…there were seasons of mourning.

Perhaps we said goodbye to someone we loved, either by their passing or by their choosing a different path down life’s road. Many of us enjoyed a year of plenty, others a year of uncertainty. Many of us struggled with decisions, others with the consequences of our choices.

Regardless, though, of whether or not we deem 2013 a good year or a bad year, we are promised this…through all our days, our God is faithful and steadfast. Though sometimes we struggle to see the way He’s made for us, we do not walk that road alone. Looking back, each of us can see both good and bad days, but the true tragedy is if we cannot say that our blessings and our struggles have made us better people than we were the year before. 


We are having Pork roast, black eyed peas, greens and sweet potatoes for diner so I hope the best for 2014 !!!!
