Quinoa Fruit Salad and some storms


I did this one  with Chris today on Alyssa's Rip Stick this summer at Uncle Billy's.



 the weather  was bad this morning so I am going to scrap some more pages I hope.


Looks like  snow tonight too :(

This is  a GREAT Salad

 
 

Quinoa Fruit Salad


Yield: Serves 6-as a side dish
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes


          

Ingredients:

1 cup quinoa (I used Red Quinoa any will work)
2 cups water
Pinch of salt
For the Honey Lime Dressing:
Juice of 1 large lime
3 tablespoons honey
2 tablespoons finely chopped fresh mint
For the fruit:
1 1/2 cups blueberries
1 1/2 cups sliced strawberries
1 1/2 cups chopped mango
Extra chopped mint, for garnish-optional

Directions:

1. Using a strainer, rinse the quinoa under cold water. Add quinoa, water, and salt to a medium saucepan and bring to a boil over medium heat. Boil for 5 minutes. Turn the heat to low and simmer for about 15 minutes, or until water is absorbed. Remove from heat and fluff with a fork. Let quinoa cool to room temperature.
2. To make the Honey Lime Dressing: In a medium bowl, whisk the lime juice, honey, and mint together until combined.
3. In a large bowl, combine quinoa, blueberries, strawberries, and mango. Pour honey lime dressing over the fruit salad and mix until well combined. Garnish with additional mint, if desired. Serve at room temperature or chilled.
Note-Use your favorite fruit in this salad. Blackberries, peaches, kiwi, raspberries, pineapple, grapes, etc. are great options!

Buffalo Chicken Mini Muffins

Don't know if you heard, but the Super Bowl is coming up... That's like the biggest snacking day of the year not sure  what all I'm making but this is one and  poppers and wings.


Buffalo Chicken or Pork Mini Muffins
3/4 C A/P flour
3/4 tsp baking powder
pinch of salt
1/4 C + 1/8 C milk
1/4 C + 1/8 C hot sauce-your favorite, I like Crystals
1 egg, lightly beaten
1 C shredded cheddar
1 C chicken or pork, cooked and finely shredded
Bleu cheese dressing for dipping
  1. Grease a 24 cup mini-muffin pan-I used Baker's Joy.
  2. Mix first 3 ingredients in large bowl.
  3. Add milk, hot sauce and egg to dry ingredients, mix.
  4. Stir in the cheese and meat.
  5. Let sit for 5 minutes.
  6. Fill muffin cups with approx 1 Tblsp batter.
  7. Bake at 375 degrees until puffed and golden, 20-25 minutes.
  8. Serve with sauce for dipping.
  9. Makes approx 24.

Saterday Blues

Well today was just a cleaning and cooking day.  I made 2 batches of Beef jerky and we watched Flight and the last of season one of The Wings Of War. We had a very relaxing day.

I love to scrap


I love to scrap. I love to put mouse to pad and create a memory for my family to love and cherish. I love to scrap the photos that I lovingly took at each important event in my children’s  lives, the funny times, the happy times…and of course the not so happy times. All of it makes up who we are as a family. It is what makes us…US!
I also love to try new things, create using a different style, while still be true to MY style. It isn’t always easy. Sometimes I struggle and fail. I have a trash can full of half completed layouts because I never really felt them.  Something didn’t “click” on the page, and I am okay with that, because I tried.

Football

We have had a very nice day ! We went to the health food store and  got some vitamins and nuts and seeds then got all the shopping done.  We made some beef jerky.  We got a new coffee machine and it has hot water on demand too. :) Now just enjoying a few football games....

My Deal today




I went to the salvation army today and got this for 5 bucks !!!!! I love it it is a rain coat and iv new !!  Last night we watched Hyde Park on the Hudson. I liked it and learned lots about HDR. I'm going to make Linguini and clams to nite for diner and  Then we are going to see Taken 2.

Jan. 9th 2013

Well I got all the Christmas stuff down and put away. I know I'm late but was not here to do it tell this week. I'm loving all the space in the apartment I now have. Sam and I husked up the surround sound this weekend and I love that we can hear the TV over the ice Machine. I went to the Chiro Monday and think I will be going once a week this year so I do not run out at the end of the year. I wore the Insoles  he had made for me and hope to get  another pair to where with dress shoes and boots. The ones I have fit my tennis shoes but that's all. I have decided to star Scrapbooking again and have found a great designer too It is Kimeric Kreations, exclusively @ the Digichick. Have a great day !!!
