Going out to eat

It is Sunday and we are going for a drive and to lunch. Not sure where to yet but I'm sure it will be good.
Yesterday Sams friend Dana came over for a visit and we had a good day. His feet are still swollen and BP is still up :(.  His new meds seem to have helped but maybe may take a few more days to regulate. Tomorrow we have a circulation test to get done and then go back to the podiatrist on the 15th.
 I have came up with a plan. lol I think We will drive one of the cars down the end of April for a week or 2 and  fly back but cant make plains tell we find out about his health and other stuff.

Monday !!!

Well I'm off to the Chiro today. He has found a new place in town. Sam is still asleep. I hope he goes to the Social Security office today. the benefits he looked at before he quit working are not the same now that he is 64 and now we dont think it wll benefit him to go out on disability. ARG!!!!  and now he no longer has a license to work in Ky . He still has a W.V. one. Any way I went to a farmers market  and did a few other things.

I made the best Ruben's tonight with the left over corn-beef from St. Patrick's day. They were so so good. Sam just don't know what to do with him self with all the time off. we got the tags taken care of and Called the Dr about his BP and feet swelling. He changed his BD meds again. I hope this helps.
      I put up a spring wreath LOL and even though we are to get snow Tuesday !!!

This is the DAY !!!

Sam's last day of work !! Not sure if we are doing the right thing or not but it it to late now.He is a little sad and scared  but happy too.

They  got him a card and a great BIG cake today and a PINK slip !!!! lol


I guess it was a stressful day for him :( saying good by to every one. So tomorrow I guess talk to a lawyer.

Spring ????

We had  a spring day yesterday and I hope  to see more soon. It go to about 72 I think. I went to Lake Reba for a walk and took some photos. The ducks were out and I even found some daffodils.Thursday is Sam's last day and I'm trying to get him to have the guys from work meet us at one of the local restaurants after work but he wont do it. I may call Dana or one of them this weekend and set it up one day next week.





Sam's 64th Birthday

Sam worked Friday and it was a quiet Night. Cameron and his girlfriend came over and stayed the night. Kelly came over Saturday and I made him a birthday brownie. :)

I typed up a letter for Sam asking to get a layoff.  I talked to a lawyer and have a Apt for next week.

Sam took the day off and we both had a Dr. appointment. He cant get in to the foot specialist tell sometime in June so I'm going to call them weekly and see if there is any cancellations tell they get him in. His B/P is still up but that is nothing new.  After that we came back to Richmond and Sam got his hair cut and then we were off to Lexington to get the taxes done. Just glad to have it done and we don't have to pay them anything. Sam took me to the Chinese buffet on the way home and we had a early night of watching a few episodes of Hart of Dixie and now we are about caught up. Here are a few shots I took.

here are some new snow photos. I did get out today and went to the store but that was it. My snow shovel has been borrowed by all my neighbors all week. Some one got stuck today again and came and got it.

We are having another winter storm . The cars are covered with ice and  the snow is coming
I will try to post photos in the morning.This is what it looks like now at 11 PM.  we have ice and now slate. I hope it starts snowing soon. It is going to be nasty in the morning if Sam trys to go to work.

I got my hair done again and love it. Even though some one thinks it looks gray LOL



We went to the Cracker Barrel for breakfast and it was so good ! We had a good nite and watched the Race, Harvick won and Jr. came in 2nd.

Bacon Jalapeno Popper Quiche

Bacon Jalapeno Popper Quiche is an amazing recipe combining incredible ingredients of bacon, jalapenos, cream cheese, and cheddar cheese, for a perfect brunch!

Ingredients
  • 9 inch frozen pie crust
  • ½ cup cream cheese, room temperature
  • 2 jalapenos, diced (deseed for less heat)
  • 1 jalapeno, sliced into rounds (for top) (I mostly deseeded these as well)
  • 3 slices bacon, cooked crisp and coarsley chopped
  • ½ cup whipping cream
  • ½ cup half-and-half
  • 5 large eggs
  • 1 teaspoon paprika
  • salt
  • ½ cup shredded cheddar cheese
  • optional-light sour cream
Instructions
  1. Preheat oven to 400 degrees F
  2. Thaw the frozen crust for 10 minutes, then prick the crust all over the bottom and sides with a fork to make tiny holes
  3. Bake it for 10 minutes
  4. Remove the crust and lower the oven temperature to 350 degrees
  5. While the crust is hot, spread the cream cheese all over the bottom as evenly as possible
  6. Sprinkle the diced jalapenos over the cream cheese (the rounds are for garnish later on)
  7. Put the cream and half-and-half into a small pot and put it over medium heat about 5 minutes or until tiny bubbles appear around the edges. Scald (where you bring it to just under the boiling point) until very hot, but not boiling
  8. Beat the eggs together in a bowl
  9. Add the hot cream mixture to the eggs, whisking constantly to combine
  10. Add the paprika, salt and bacon
  11. Pour into the crust and bake for 30 minutes
  12. Remove from oven, arrange the jalapeno slices on top, sprinkle with cheese and bake until the cheese has melted and turned golden brown, about 15-20 minutes (the original recipe said 12-15 minutes, but I did closer to 20. Check at 12 minutes, every couple of minutes)
  13. Cool slightly before serving
  14. Optional-serve with light sour cream
