Feeling agavated I need to make a Pumpkin Roll

Well today did not go to good.  I did get lots more stuff in the yard sell pile.  I hope to make lots of money next weekend, I'm getting rid of every ting I do not want to move to the little house in Florida that we do not use every day. I did  do my Fall wreath today and I like it I did not get a photo yet but I will tomorrow. I like fall but hate wait it brings, I think I will make a pumpkin roll tomorrow I looked up my recipe tonight and found this one  and will post photos too :) have a  good nite

Perfect Pumpkin Roll

Ingredients
3 eggs
1 cup sugar
2 tsp vanilla extract divided
2/3 cup canned pumpkin I use my fresh ( frozen)
3/4 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/4 tsp salt
1 1/4 cup powdered sugar divided
1 package {8 oz} cream cheese softened
6 tbsp butter softened

Instructions
Preheat oven to 375 degrees F. Line 15×10-inch jelly-roll pan {I don’t have one so I just used a 9×13} with parchment paper and grease and flour the paper. Sprinkle a clean kitchen towel with 1/4 cup powdered sugar.
In a medium bowl, combine flour, baking powder, baking soda, cinnamon, and salt. In a large bowl with an electric mixer, beat eggs, sugar, and 1 tsp vanilla until smooth. Add in pumpkin. Stir in flour mixture. Spread batter evenly into prepared pan.
Bake for 13 to 15 minutes or until cake springs back when touched. Immediately loosen and flip cake onto prepared towel. Carefully peel off the paper. Roll up cake and towel together, starting with the narrow end. Cool completely on a wire rack.
Beat cream cheese, butter, 1 cup powdered sugar, and 1 tsp vanilla in a bowl until smooth. Carefully un-roll cake and spread filling over cake. Re-roll cake. Wrap in plastic wrap and refrigerate for at least 1 hour before serving.

YIELD: 1 loaf (12 Servings)

Pumpkin Spice Quinoa Breakfast Cake

Pumpkin Spice Quinoa Breakfast Cake

Pumpkin pie infused breakfast cake made with quinoa flakes, pumpkin and chia seeds. Delicious, quick, gluten-free, and vegan, too!
Ingredients
  • ½ cup quinoa flakes
  • ⅓ cup canned pumpkin
  • ⅓ cup not from concentrate apple juice
  • 1 tablespoon chia seeds
  • 1 tablespoon coconut nectar (optional)
  • 2 teaspoons pumpkin spice *see note
Instructions
  1. Prepare a 16oz. microwave/oven safe dish by oiling with a dab of coconut oil. Set aside. Drop all ingredients in a small bowl and mix until fully incorporated. Press mixture into prepare dish and even out with fork.
  2. Microwave option: Place in the microwave and cook for 3 minutes. You’ll know when it’s done when it rises slightly, is harder to the touch, and pulls away from the sides of the dish. Don’t bake it too long, or you’ll have a Frisbee!
  3. Oven option: Place in a preheated oven at 350F and bake for 25-30 minutes, or until toothpick inserted comes out clean.
  4. Allow to rest for 1 minute before tipping over onto a plate and drizzling with coconut butter. Or, prepare in jar as I did with this version.
Notes
If you don’t have pumpkin spice, you can use: 1 teaspoon ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg and ¼ teaspoon all spice instead. Topping used in photographs: melted coconut butter

Let’s talk about quinoa for a second, kay?
Quinoa may look like a grain, but it’s actually a tini-tiny seed. It has high levels of amino acids, lysine and isoleucine, which makes it a complete protein source (meaning that it has all essential amino acids).
What is the difference between quinoa flakes and quinoa seeds?

Quinoa seeds can be boiled like rice and used in salads, soups or stews like I did with smokey bear quinoa, cranberry mango salad, or this warm kale pilaf.
Quinoa flakes are crushed quinoa seeds. They’re a lot like quick oats but are gluten-free, grain-free and taste awful on their own. Ha… really, they do. But they work fabulously as a replacement for bread crumbs and are really good in quinoa flake bakes.

So now that we got all that out of the way…
Prepping this recipe couldn’t be simpler. Add everything to a bowl, mix it around, place it in a dish, cook and consume.


Eating pumpkin never tasted this good.

Here is the photos from the Ky River the other day. I have been cooking a turkey diner today and  going threw the kitchen cabinets :(  These  were are the Ft Boonesboro State Park we  go past it all the  time but I have never driven in there tell this weekend.

Been busy

I have been getting ready for a big Yard sell on the 27th. I have been threw about the whole house, Dejunking it :)

Sunday I met Sam and the Golden Coral in Winchester and on the way I stopped at the Ky. River and took some pictures I will try to put them on there tonight. I  made a  spinach and portabella mushroom pizza and added chicken and it was so good ! and I  got a recipe from mom for this and it was good too.

CHICKEN CHILI RELLANO CASSEROLE

Preheat oven to 350 degrees.

1-1/2lbs cooked, cut up chicken. (place chicken in crockpot with a cup of verde sauce cooked on high for 4 hrs and shredded)
6-8 Pasilla chili’s, roasted, skinned and seeded. ( you can use 2 cans of whole green chili’s if you like)
1 lb of shredded cheddar cheese
1/4 lb shredded Monterey jack cheese
1/4lb of pepper jack cheese
1 can evaporated milk
4 eggs
2 TBSp flour
2 tsp of salt
Sublime Minds
In a 9×13 casserole dish. Place a layer of green chili’s. Add chicken on top of chili’s.Top with shredded cheese (about half of your mixed cheese) Add a layer of chili’s on top of cheese. In a bowl beat eggs, evaporated milk, salt and flour. Pour on top chili layers. Top with the rest of cheese. Bake at 350 for 45-60 minutes or until done. Let rest 5 minutes before cutting!!

EKU's College of Justice and Safety dedicated a memorial to the first responders who sacrificed their own lives to save others. It is small but very moving.It was a great reason to get out and take some photos.

Remembering 9.11.01

Thinking about all those who lost their lives on this day 12 years ago. No matter how many years pass the memories and emotions of that day are still so strong for me,Sam and I were in Myrtle Beach  on vacation. Billy, Jen and Alyssa drove up from Florida the night before. Sam and I were in one room of the suite watching the news having coffee when the 1st one hit.I woke them up to come watch the news. The sky was clear and this couldn't have been an accident. Then there on live TV the second plane hit the towers. I felt so sick, like someone had violated everything I knew to be true. Jen was so upset and I was trying to stay calm for her. It sure was a scarey thing to have lived threw and hope  we never go threw anything like it again. Please pray for our country, the people who lost someone on that day, and most of all remember the heroes, those who died saving others and those who lived to see another day. I'll never forget 9/11/01

Sam now feeling good today

Sam's legs are hurting and swollen today so we are not going to the farm.  we watched fast and furious 6 and  a few other movies and just relaxed. His blood pressure is up :(
My tomatoes are doing so good still.   we are watching the Nascar race and going to bed soon.

Homemade Body Butter

I have been playing again. I was so tired yesterday I took a long bath with Epson salt and lavender oil and then  used my new body butter and though I never shared it.  I also got some good shots of the Hummers too.

Homemade Body Butter
 

Ingredients
  • 1½ cups of coconut oil
  • 3 tablespoons honey
  • 2 tablespoons zest of grapefruit or orange I used a orange
 Coconut oil and honey alone have so many healthful benefits, so just imagine what combining the two will do for your skin, without all of the junkity junk so many other skin care products can have. I’ve primarily been using it to shave my legs. While there’s no lather, it’s pretty cool, because once I’m out of the shower or bath, my legs are already moisturized with no need for anything else. Very handy dandy, indeed. It can also be added by the spoonfuls to a hot bath as a bath oil/moisturizer.Be aware that since it’s an oil base it can make the shower floor or tub quite slippery, so be careful! And Since there is citrus zest  little pieces of zest that you will need to wipe off.

Day of rest

Today I wanted a day of rest. LOL
 Well I did 3 loads of laundry, payed bills,Picked  up liquor and groceries and then cooked spaghetti.  Maybe tomorrow I will rest. I do have to say having the house to myself and quiet was nice but I do miss Sam.

Weekend with Grayson

Just a quick post for now. We have Grayson this weekend. We have gone to Orange leave. to the pool, bowling  and today I think we are going to mini golf lol poor Papaw . This is the 1st time I have bowled in years and Sam said it has been 40 years for him but I think we did good !!!
